Super Chunky Homemade Granola

Aka the most addicting, hearty, vegan snack. This granola actually contains a secret ingredient (well not anymore), dates! And no not that kind of date, the tropical dried fruit that elevates the flavor of any dessert, and adds tons of natural sweetness. No but seriously if you haven't tried putting chopped dates in your granola yet, you aren't living! It's life-changing, so create this recipe with caution...THIS IS HIGHLY ADDICTING!!

TIME: 50 mins.


Ingredients:

- 2 cups rolled oats

- 1/2 cup oat flour

- 2 tbsp ground flaxseeds

- 2 tbsp sesame seeds

- 3/4 cups sliced almonds

- 3/4 cups pecans

- 3/4 cup cashews

- 2 tsp cinnamon

- 1/2 tsp sea salt

- 1/4 cup almond butter

- 1/3 cup maple syrup

- 1 tsp vanilla extract

- 1/2 cup medjool dates (pitted & chopped)

- 1/2 cup dried cranberries

 

Instructions:

  1. Preheat your oven to 350 degrees F and line a large baking tray with parchment paper.

  2. In a large bowl, whisk together all your dry ingredients (except the dried fruits).

  3. In a small saucepan, over low heat, combine your almond butter, maple syrup, and vanilla extract. Stir frequently, until the almond butter has melted, and has become runny. Pour over the dry ingredient mixture, and mix until everything has been evenly coated.

  4. Spread the granola out evenly on the prepared baking sheet, and bake for 20 minutes.

  5. Once the granola has finished baking for those 20 minutes, remove from the oven, give it a good stir, and place it back in the oven to bake for a final 20 minutes. Allow it time to cool completely before topping with your dried fruit, and breaking into tiny clusters. Store in either a mason jar, or another airtight container.

  6. Enjoy!!
