Orange Cardamom Granola

Not only is this orange cardamom granola super clustery and crisp, but it isn't overly sweet! Your house will smell incredible, as all the warm, cozy spices saturate the air! A simple, vegan, dairy free staple everyone needs in their lives! Whether it's a topping for smoothie bowls, yogurt parfaits, or just a quick snack to eat straight from the jar, this miracle granola can do it all!

Ingredients:

- 1.5 cups rolled oats

- 1/2 cup pecans (chopped)

- 1/4 cup almonds (chopped)

- 1/4 cup pumpkin seeds (chopped)

- 3 tbsp sesame seeds

- 1/4 tsp sea salt

- 1 tsp cinnamon

- 1/4 tsp cardamom

- The zest from 1 orange

- 1/4 cup almond butter

- 2 tbsp olive oil

- 1/4 cup maple syrup

 

Instructions:

  1. Preheat your oven to 300 degrees F and line a large baking pan with parchment paper.

  2. Mix the oats, pecans, almonds, pumpkin seeds, sesame seeds, sea salt, cinnamon, cardamom, and orange zest together in a medium sized bowl.

  3. Stir together the almond butter, olive oil, and maple syrup in a separate bowl. Pour your wet mixture over the oat mixture, and mix one last time until everything has been coated evenly with the almond butter mixture.

  4. Spread the granola on the prepared baking sheet and gently press it down using the back of a spatula.

  5. Bake for 35 minutes, flipping halfway through. Let it cool completely before breaking into clusters.

  6. Enjoy!!
