They're chewy, they're sweet, they're addicting, they're simple to make, and they have the perfect sugar cookie cracks on top! These delicious bites from Heaven deserve a bow, as I can confidently say that they are the BEST cookies on the blog! And how many cookie recipes have I posted?..That's right! A LOT! Lemon and almond IS the superior combination, so imagine that in cookie form! Please make these lemon almond sugar cookies, you won't regret it! I swear! Okay, enough said haha, I'm gonna go eat another one now!

Ingredients:
- 2.5 tbsp water
- 1 tbsp ground flaxseed
- 1.25 cups almond flour
- 1/4 cup arrowroot flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/4 cup vegan butter (melted and cooled)
- 1/4 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup organic cane sugar
- 1/2 tbsp lemon juice
- The zest of 2 lemons
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 1/2 cup sliced almonds
Instructions:
First we're going to create a flax egg, by combining the water with the ground flaxseed, the set aside. Also preheat your oven to 350 degrees F and line a large baking sheet with parchment paper.
Add the almond flour, arrowroot flour, baking soda, and salt in a medium sized mixing bowl.
In a separate large bowl, whisk together the almond butter, vegan butter, maple syrup, cane sugar, flax egg, both extracts, lemon zest, and juice until a smooth mixture remains.
Mix the dry ingredients into the wet ingredient bowl, until a well incorporated, cookie dough has been formed. Now place the bowl with the dough in it, in the fridge to chill for about 15-20 mins.
Use a medium sized ice cream scoop to scoop the dough into even balls, and place wisely on the prepared baking sheet as they will spread out quite a bit. Don't forget to top your cookies with the sliced almonds as well (if you fancy ;).
Bake for 12 minutes or until they turn a light brown shade. Remove from the oven, after fully baked, and allow them at least 5 minutes to cool before attempting to transfer onto a wired cooling rack.
