Greek Yogurt Protein Pancakes

Struggling to achieve your daily protein goal? Girl I've got you! These greek yogurt pancakes make for the best, most convenient, protein packed breakfast! You can't even taste the tartness greek yogurt contains, as the natural sweetness from the banana masks it completely! Not to mention the chocolate chips on top, are chef's kiss deliciousness! All you need is 20 minutes! Plus these pancakes are made in the blender! Breakfast can't possibly get any better!

 

YIELD: 2 servings

TIME: 20 mins.


Ingredients:

- 1 banana

- 2 eggs

- 1/2 cup + 2 tbsp rolled oats

- 1/4 cup greek yogurt

- 1/2 tsp cinnamon

- 1/2 tsp baking powder

- 1/8 tsp sea salt

- 1/4 cup dark chocolate chips

 

Instructions:

  1. Add all your ingredients (except the chocolate chips to a blender, and blend until a smooth pancake batter remains. Then, using a spoon, stir in the chocolate chips.

  2. Heat either a non-stick skillet over medium heat on the stovetop, or just preheat your pancake griddle to a medium heat, if using.

  3. Using a 1/4 measuring cup, scoop the pancake batter on cooking surface of choice, and wait until little bubbles appear on top, before attempting to flip, and proceed to cooking until golden brown.

  4. Form a delicious stack, and top with extra banana slices, chocolate chips, and obviously maple syrup.

  5. Enjoy!!
