Carrot Cake Baked Oatmeal

Oh man, where do I even start? This carrot cake baked oatmeal is irresistible! It's easy, and delicious breakfast recipes like these that make me wonder, "how can something so good be so healthy for you?!" With a sweet, gooey molten lava cream cheese frosting center, and the perfect crunch that the pecans give, this is a dessert or breakfast recipe that will be made on repeat for you! Plus it's single serve so you get to eat it all!

TIME: 30 mins.


Baked Oatmeal Ingredients:

- 1/2 cup rolled oats

- 1/2 cup almond milk

- 1/2 tbsp chia seeds

- A splash of vanilla extract

- 1 tbsp maple syrup

- A pinch of sea salt

- 1/2 tsp baking powder

- 1/8 tsp nutmeg

- 1/2 tsp cinnamon

- 1 scoop vanilla protein powder

Cream Cheese Frosting Ingredients:

- 2 tbsp vegan cream cheese (softened)

- A pinch of sea salt

- 1 tsp organic cane sugar

- 1/2 tsp vanilla extract

 

Instructions:

  1. Preheat your oven to 400 degrees F and spray a large oven safe bowl with cooking spray.

  2. Add all the baked oatmeal ingredients to a blender and blend until smooth. Pour your batter into prepared baking dish and mix in, using a spoon, 1/2 cup of shredded carrots.

  3. In a small bowl stir together all the cream cheese frosting ingredients, and spoon about half of the delicious mixture into the center of your baked oatmeal, making sure it gets covered with the batter.

  4. Top with optional pecans and bake for roughly 20 minutes. Top with the rest of your cream cheese frosting and almond butter.

  5. Enjoy!!
