Brownie "Little Bites" Muffins

As a former "Little Bites" addict, I can confirm that this healthier remake tastes exactly like the iconic brownie muffins everyone grew up on! Except this time, you won't get 4, instead we're gonna make 24! These gluten free, and dairy free muffins are rich, fudgy like a brownie, and have a strong chocolate flavor! What's to hate? Better than the originals! They can also be baked up in under 30 minutes, and only require a few simple, healthy ingredients: one of which being an apple. Just trust me.

 

YIELD: 24 servings

TIME: 25 mins.


Ingredients:

- 1 apple (diced)

- 1/2 cup almond butter

- 1 egg

- 5 tbsp cocoa powder

- 6 tbsp maple syrup

- 1 tsp vanilla extract

- 1/2 tsp baking soda

- 1/2 cup dark chocolate chips (melted)

 

Instructions:

  1. Preheat your oven to 350F/180C.

  2. Place your diced apple in a microwave safe bowl, and heat it for roughly 2 minutes, or until soft. Carefully drain the excess apple liquid, (it will be VERY hot!)

  3. Add all your ingredients to a blender, and give it a good blitz until an extremely thick batter remains.

  4. Spray 2 mini, standard dozen muffin tins with cooking spray and evenly divide the muffin batter among each muffin cup.

  5. Bake for 17 minutes or until a tooth pick inserted comes out clean.

  6. Enjoy!!
