Blackberry Jam Pancakes

Once you find out how easy these pancakes and jam are to make, you'll be on cloud nine! Both the jam and pancakes are made with natural ingredients that will give you long lasting energy, and make you feel amazing! The perfect yummy breakfast!

TIME: 30 mins.


Jam Ingredients:

- 2 cups blackberries (fresh or frozen)

- 1 tbsp maple syrup

- 2 tbsp chia seeds

Pancake Ingredients:

- 2 eggs

- 1 cup greek yogurt

- 1/2 cup almond milk

- 1 tsp vanilla extract

- 1 cup whole wheat flour

- 1 tbsp stevia

- 2 tsp baking powder

- 1/2 tsp salt

 

Instructions:

  1. First we're going to make our jam, so add your blackberries and maple syrup to a small pot and cook on high heat until the blackberries are soft, stirring often to prevent them from burning. Smash them with a fork as you go.

  2. Next strain your jam mixture if you aren't a fan of blackberry seeds

  3. Stir in your chia seeds and allow the jam time to set up in a mason jar while we make our pancakes.

  4. To make the pancakes, mix together the eggs, greek yogurt, vanilla extract, and almond milk until well combined and fluffy.

  5. Add in your whole wheat flour, baking powder, salt and stevia and whisk once more until a smooth batter has formed. Letting the batter sit for about 7 minutes or so, so then that way the baking powder has time to activate.

  6. Meanwhile preheat either a pancake griddle or spray down a non-stick pan with cooking spray and heat up on medium-high.

  7. Drop batter using a 1/4 measuring cup and cook the pancakes until golden brown on each side.

  8. Form a glorious stack and top with the blackberry jam. Enjoy!!
